Easy Italian Wedding (Inspired) Soup

I wanted to make an easy, delicious soup for dinner last night because soup season is upon us.  This is similar to Italian wedding soup but with a few minor differences.  I didn't make the stock myself because this was all about making something fast.  A lesson on homemade stocks will be part of a later post.  Until then, enjoy the shortcut and try out this yummy meal.  This makes a large batch so you can have leftovers.
6-7 servings
Ingredients:
1 pound ground beef
2 Tablespoons finely chopped flat leaf parsley
1/3 cup breadcrumbs (I used panko)
1/4 cup grated parmesan cheese
pinch of salt and pepper
2 quarts Pre-made stock
2 cups Israeli couscous
1 1/2 cups peas

Instructions:
1) Mix together the meat, parsley, breadcrumbs, cheese, salt and pepper.  Roll into little meatballs.
2) Heat a skillet with a little olive oil and cook the meatballs over med-low heat until golden brown and mostly cooked on the inside.  You can do this in batches if your pan isn't large enough to fit all of the meatballs.
3) In a large pot, bring the stock to a boil.  Add the couscous and cook until al dente.  Add the peas and meatballs and cook for 1-2 minutes.  Serve and enjoy!

  1. this looks great, I have to find a substitute for breadcrumbs. also need to find substitute for cheese. There's an interesting restaurant out here you'd like to go to. It's called "How to cook a wolf".
