Turkey Lettuce Wraps




This is a fast, delicious meal that is also diet-friendly when you replace the usual tortilla wraps with lettuce leaves.  You can make it with other ground meat but this time I used turkey breast because it's lean and I think it tastes great in this dish.  I also noticed while typing out the recipe that there is "1" of almost every ingredient so it's easy and is sure to be a crowd-pleaser.


Ingredients:
1 medium yellow onion chopped
1 carrot chopped
1 celery stalk chopped
1 garlic clove minced
1 pound ground turkey breast
2 cups chopped tomatoes (I used canned)
1 teaspoon madras curry powder
salt and pepper to taste
1 head of iceberg lettuce

Instructions:

1) Heat a large skillet with about 1 tablespoon of olive oil.  Add the onions and saute' until translucent, then add the celery and carrots and sprinkle a pinch salt and pepper.
2) When the veggies have softened a bit (about 3 minutes) add the garlic and be careful not to burn it.  After a minute, add the ground turkey and stir it around to break it up as it cooks.  Once the turkey it cooked through, add the tomato and curry powder and simmer for 5 minutes, or until it begins to thicken. Add salt and pepper as needed.
3) You can serve it either hot, or cold by wrapping it in a lettuce leaf.
