Fig and Almond Coffee Cake


The other day I had a craving for coffee cake.  Not just any coffee cake, but the kind with huge chunks of streusel on top and dusted with powdered sugar.  I looked up several recipes and decided to go off of one by Martha Stewart, but made some of my own changes.  The result was a deliciously moist cake with a fig filling and an almond streusel topping.  New Years resolutions are for quitters so enjoy this decadent cake for a sweet start to the new year.

Makes about 1 tube cake or 10 muffin-sized cakes
Ingredients:
2 cups all purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
1/2 cup unsalted butter
1 cup sugar
2 large eggs
1 teaspoon vanilla extract
1 cup sour cream
about 1/2 cup fig butter
Streusel topping (recipe follows)

Instructions:
1) Preheat the oven to 350 F and grease the baking pan you're using.  In a medium bowl, mix together the flour, baking soda, baking powder and salt.  Set aside.
2) In a mixing bowl or the bowl of a stand mixer, cream together the butter and sugar until light and creamy (about 5 minutes).
3) Add the eggs and vanilla and beat until well incorporated.  Be sure to scrape the bottom of the bowl.  Also don't over-whip once the eggs are added.
4) Add 1/2 the dry ingredients and mix until incorporated.  Then add 1/2 the sour cream and mix until incorporated.  Repeat with the remaining dry ingredients and sour cream being sure to scrape down the bowl so everything is well incorporated.
5) Put the batter into the baking pan filling only 1/3 the way.  If using a muffin tin, then spoon about 2 teaspoons of the fig butter onto the batter and cover with more batter leaving about an inch of room at the top.  If using a tube-loaf pan then put a ring of fig butter on top of the batter and then cover with more batter.  Crumble the streusel on top and bake for 30-35 minutes or until a toothpick comes out clean when inserted into the middle.
6) Allow to cool completely.  Use a butter knife to help pry the cakes out of the pan and then dust with powdered sugar.  Enjoy!




Streusel topping:
Ingredients:
2 1/2 cups almond meal
1 cup all purpose flour
3/4 cup packed light brown sugar
1 teaspoon salt
2 teaspoons unsweetened cocoa powder
2 teaspoons ground cinnamon
1 cup softened butter

Instructions:
Mix all of the ingredients in a mixing bowl using your hands or a pastry blender.  Large chunks should form.  Add a little more flour if needed.
