Disappearing Peanut Butter Oreo Brownies

At the supermarket the other day I found something amazing: Peanut Butter Oreos!  That's right, Oreo cookies with peanut butter filling.  I knew I had to buy a package and I immediately had plans to make something with them.  I decided to take my brownie recipe and toss a few of the Oreos into the mix.  The result was a gooey, yummy brownie that had people helping themselves to second, third, and fourth portions.


Ingredients:
9 ounces dark chocolate
1 stick of butter (8 Tablespoons)
3/4 cup granulated sugar
1/4 cup light brown sugar
4 eggs
1 teaspoon vanilla extract
3/4 cup plus 2 Tablespoons flour
1/2 teaspoon salt
15 peanut butter Oreos

Instructions:
1) Preheat the oven to 350 Fahrenheit.  Grease a 9X9 inch square baking pan and line with parchment and set aside.
2) Over a double boiler (a pot on the stove over low heat with an inch of water simmering), melt the chocolate and butter together in a metal bowl.  This should be done over low heat and stir as it melts.  The mixture should never be too hot or you'll burn the chocolate.

3) In a large bowl, mix together the sugars, salt, and beat in the eggs one at a time.  Mix in the vanilla.
4) Add the chocolate mixture to the egg and sugar mixture and stir until just combined.
5) Sift the flour, then fold into the chocolate, egg and sugar mixture.  Stir only just to combine otherwise you will overwork the flour.
6) Put 9 of the Oreos on the bottom of the parchment lined baking pan.  Pour all of the batter into the pan, over the cookies.  Place the remaining 6 Oreos on top, staggering them so they lie in between the cookies on the bottom.  Press them down.  They won't be fully submerged in the brownies but that's ok.

7) Bake for 40-50 minutes or until not jiggly in the center.  A knife inserted in the middle shouldn't come out clean, but shouldn't have completely liquid batter on it either.
8) Allow to cool them slice up and enjoy!
