Vanilla-Lemongrass Infused Simple Syrup


Basic simple syrup is one of the easiest things in the world to make.   It is a combination of sugar and water (usually in a 1:1 ratio) that allows you to sweeten things without having to worry about trying to dissolve the sugar.   It is a great way to add flavor to drinks especially if you infuse it with other flavors.  Today I decided to make Vanilla-Lemongrass simple syrup.  It has a fruity/floral scent that adds that extra pop of flavor to whatever you choose to use it on.  

Ingredients:
4 stalks of Lemongrass
2 cups granulated sugar
2 cups water
1 vanilla bean, split and scraped out
 
Instructions:
1) Cut of the bottom 2 inches of the lemongrass (the white part).  That's where the flavor lives, and so you have to whack the crap out of it using the back of your knife in order to extract that flavor.  Add these beaten lemongrass bulbs to a pot along with the water, and sugar.


2) Split a vanilla bean down the center and scrape out the vanilla beans.  Add the beans along with the empty pod to the pot.


3) Bring the mixture to a boil, stirring occasionally to help the sugar to dissolve.  Allow it to boil for a minute or two then turn off the heat and cover the pot.  After 10-15 minutes of steeping, strain the mixture into a jar.  I used a strainer with holes that would allow the little vanilla beans to remain in the liquid.
4) When cooled, use however your heart desires.  I think it would go well over some fresh berries and topped with a little greek yogurt.  It would also be great as a sweetener in lemonade.  Enjoy !



**I separated and sliced the top lemongrass leaves and dried them to use in an herbal tea blend.  Waste not, want not.
